Lemmon Strawberry Habanero Cupcakes
Wait till you taste this one.
Oh my my, I have done
it again.
These are very amazing cupcakes is all I can say. A little twang, a little sweet, a little heat, it all goes together so well. Like Bonnie and Clyde.
Enjoy
3 cups flour
2 cups sugar
4 eggs
1 cup unsalted butter room temp
1 juice of fresh lemmon
lemon zest from 1 lemmon
4 pinches salt
2 teaspoons vanilla
2 teaspoons baking powder
1 1/2 cups milk
1/2 cup sour cream
1 quart fresh strawberry's chopped
2 Habanero peppers seeded rib removed washed and chopped fine
2 table spoons rum
Butter Cream frosting
1/2 butter
2 cup powder sugar
1 teaspoon lemon extract
Steps to follow
1. Mix Strawberry's, Habanero peppers, and Rum together in a small bowl set aside.
Next
2.Cream butter, sugar, eggs. lemmon juice, vanilla.
3.Then add all other ingredients to the creamed mixture.
( Except for the berrys and peppers,rum and frosting ingredients)
4.You will want to mix till just mixed, do not over mix.
5.Place batter in cup cake holders filling 3/4 way full
6.bake in a 350 degree oven for 13-15 min remove from oven let cool.
7.For frosting:
cream all ingredients together in a small bowl set aside.
8.After they have cooled cut a hole in center of cupcake, place a scoop
of the strawberry mixture in center of hole replace the chunk of cupcake over hole.
frost top and they are done
makes 24 cupcakes
