MELT IN YOUR MOUTH GOOD 3 CUPS FLOUR 2 TEASPOONS BAKING POWDER 1/2 SUGAR 1/2 CUP BROWN SUGAR 1 1/2 CUPS BUTTER 3 EGGS 1 CUP  CREAM 1 CUP SOUR CREAM 2 SHOTS BRANDY 2 APPLES CHOPPED 2 PEARS CHOPPED 1 CUP APPLE SAUCE 1 TBS CINNAMON 1 TEASPOON CLOVES OVEN 350 DEGREES CREAM BUTTER AND SUGAR ADD YOUR EGGS AND MIX ADD YOUR CINNAMON, CLOVES, AND APPLE SAUCE  2 SHOTS BRANDY MIX ADD CREAM THEN MIX ADD FLOUR AND SOUR CREAM THE CAKE MIX WILL BE HEAVY WHICH IS WHAT YOU WANT THIS IS NOT A CAKE BOX MIX.  ADD YOUR APPLES, AND PEARS MIX WELL GREASE AND FLOUR CAKE PAN POUR BATTER IN PAN AND SPRINKLE A TBS OF SUGAR OVER TOP  BAKE AT 350 DEGREE OVEN FOR 45 MIN CARAMEL SAUCE 8 caramel 1/2 real butter MELT IN MICROWAVE SAFE BOWL TILL CREAM MIX WELL AND DRIZZLE OVER CAKE BEFORE SERVING.  MAKES 1...

NOTHING BETTER THAN SEAFOOD 1 POUND LUMP CRAB 1 POUND CRAWDAD MEAT 2 CUPS PANK O 4 EGGS 1 STALK CELERY 1 JALAPENO 4 GREEN ONIONS 2 TB SPOONS DILL WEED 1 TEASPOON OLD BAYS 1 TEASPOON LEMON PEPPER 1 TEASPOON GARLIC POWDER 1 TEASPOON PARSLEY  TAKE A POUND OF LUMP CRAB PLACE IN BOWL THEN ADD A POUND OF CRAWDAD MEAT THEN ADD YOUR CHOPPED CELERY, JALAPENO SEEDED AND CHOPPED GREEN ONION CHOPPED  THEN ADD ALL YOUR SEASON, LEMON PEPPER,OLD BAYS, DILL WEED, PARSLEY, GARLIC THEN ADD YOUR PANK O THEN ADD YOUR EGGS MIX WELL WITH YOUR HANDS  THEN YOU WILL MAKE YOUR PATTIES I USE ABOUT ONE ICE CREAM SCOOP SIZE AMOUNT FOR MINE HEAT YOUR CAST IRON SKILLET WITH 1/4 INCH OF OIL PLACE YOUR CAKES IN SKILLET AND COOK FOR  ABOUT 4 MIN ON EACH SIDE TILL THEY BROWN THIS IS WHAT YOU WANT THEM TO LOOK LIKE SERVES 8 

Roasted Brussel Sprouts

Now my husband does not like Brussels sprouts.  But he loves these hands down 1 pound Brussels Sprouts chopped 12 oz sliced Mushrooms 6 Strips bacon cooked and crumbled 2 TBS Oyster Sauce 4 TBS Olive Oil 1 teaspoon Garlic Powder Salt and Pepper to taste Heat oven to 420 degrees Splash Olive oil on pan first  Then chop Brussels Spout, Mushrooms, And crumble bacon spread out on cookie sheet Mix Oyster Sauce, Olive oil, and Garlic in a small bowl Drizzle over the Veggies and place in Oven and cook for 25 min at 420 degrees  Serves 4

Did you Say Gumbo!

Nothing better then a big pot of Gumbo. What you need. 1 chicken breast chopped 1 pack beef smoked sausage chopped 1 bag of large shrimp 1 onion chopped 3 stalks  celery chopped 1 green pepper  chopped 1  jalapeno chopped 3 bay leaves 2 sprigs of thyme and oregano 1 table spoon Cummin 2 tablespoons oyster sauce 1 tablespoon Creole 4 chicken bullion cubes 8 cups water 2 tables spoons oil 3 garlic cloves chopped 2 dashes liquid smoke 3 basil leaves chopped 1 can lump crab drained If you do not eat meat. Than you may omit the meat and use vegetable stock instead Place sausage, chicken,all peppers,onion, celery, garlic. In pot cook for about 8 min to cook meat. Add all other ingredients except for shrimp and carb to pot.  Remove stems from thyme and oregano Simmer for about 1 hour. Drain crab, then add the shrimp and crab to pot.  At this time cook a pot of instant rice in a different pan. ...

Who can say no to Chocolate  Chip  Cookies.  What you need 3/4 cup ice cold unsalted butter cubed 3 table spoons cold solid bacon grease 2 eggs.                                                         2 teaspoons vanilla.                                 1 cup Brown sugar packed.                   3/4 cup sugar.                                            Dash of salt.                                               3 cups flour.        ...

Melt in your mouth Roast

There is something  said about a roast Cooked in cast iron.  Nothing can compare. 1  2lb pot roast 1 pound small potaoes 16 oz sliced mushrooms 1 medium onion chunked 1/3 cup soy sauce 2 pints water salt and pepper Take a cast iron pan heat pan with 2 table spoons olives oil. Get it good and hot. While you are doing that,  season both sides of your roast with salt and pepper. When pan is hot brown your roast on each side for about 3 min on each side. Remove from heat and add rest of ingredients to the pan. cover lose with tin foil ,  and place in oven on 350 and cook for 4 hours. This is one of my most preferred ways to cook a roast. Enjoy with a nice glass of red sweet wine and relax. serves 6

Italian Meatballs

Italian Meatballs 1 pound Lamb or lean Burger 1 Pound Italian Sausage  1 table spoon Italian season 1 table spoon parsley 2 teaspoons garlic 2 table spoons basil pesto  1/4 cup choppes black olives 1/4 cup chopped green olives 1 cup pank o bread crumbs 1/2 cup Parmesan cheese 3 eggs 2 pounds crushed tomatoes  Place all ingredients in a large bowl.  Make sure you mix it well by hand  Next form your meatballs.  I make them about the size of a small orange  Bake in oven in a pan on 375 for about 20 minutes. Remove pan from oven.   Then add your 2 pounds of crushed tomatoes to pan, cover with tin foil and place back in oven for about a hour on 375 All done you may like a side of pasta or bread to enjoy these with. Serves about 8

Comfort Chicken And Dumplings.

My Chicken and Dumplings.  I can say there is always comfort in Chicken and Dumplings.  I love this stuff, it  makes you feel all cozy. My Chicken and Dumplings 1 Chicken breast with the bone 3 chicken thighs with bone 4 bay leaves 3 Carrots 2 Onions 3 Stalks Celery 2 sprigs of  Thyme 1 garlic clove salt and pepper to taste 4 quarts water 2 Tbs corn starch fresh Parsley chopped Dumplings. 1 Cup of Flour 2 1/2 teaspoons baking powder 1 TBS dry dill weed 1/2 cup milk In a stock pot place  2 carrots, 1 onion, 2 stalks celery, 3 bay leaves, Thyme, Water, and Chicken.  You want to boil this for about a hour. After it cooks Remove the chicken let cool till you are able to touch  With out burning your hands. and pull Chicken off bone Strain the liquid so you have only broth left.
