Ham and Rosemary potatoes

4 potatoes cleaned and sliced 1 Ham stake chunked 2 cups water 1 1/2 cups milk 5 pats of butter 4 crank black pepper 2 pinches salt 1 pinch garlic powder 1 sprig rosemary leaves chopped 3 TB corn starch Place all ingredients in baking dish mix well. And bake for about 45 min in a 375 degree oven till thickening and potatoes are done. Serves 4

Roasted tomatoes

There is nothing better than making roasted tomatoes. These will keep in you frezzer all winter long. So don't be shy make a ton, you will use them. 20 tomatoes washed and dryer Olive oil Smoked sea salt Cracked black pepper 1 onion 1 bundle of garlic roasted as well Italian season Place tomato in bowl and coat thin with oil Place on cooking sheet top down. Add onion and garlic to tray as well. Drizzle olive oil on tray give a few like 4 cranks of pepper and salt and sprinkle season over tomatoes.  Roast in a 300 degree oven for about 4 hours. After they cool place in frezzer safe container and frezze.

Organic is the way to go.

With summer coming to a end, I can say my harvest of food was awesome this year.  Food with no harmful chemical or no food messed with to be bigger or more. I just love real food.  Happy harvesting to all

Apple peach BQ sauce

This BQ sauce does a happy moonshine dance in your mouth. The flavors of, twang southern American, soul, Cajun , French, Asian, and Spanish.  All come together to do a happy moonshine dance in your mouth. It is sweet, a little sassy, a little twang, and Smokey with a kick. 1 quart of drained tomatoes 1 pint jar Apple sauce 1 small onion diced fine 1 half green pepper diced fine 2 habenero peppers seeded and diced fine 2 shots moonshine 2 shoots lemon vodka 4 apples peeled and chopped 4 peaches peeled and chopped 1/2 cup black cheery juice 1 cup ketchup 1/2 cup Apple cider vianger 1 cup Brown sugar 1 cup honey 1/3 cup molasses 1 tb dried jalapenos 2 TB onion powder 3 TB garlic powder 1 ts cayenne  pepper 1/2 ts celery seed 1 tb old bays season 2 TB chilli powder 1 tb Chinese five spice 1 ts cinnamon 1 ts ground cloves 1/3 cup liquid smoke 2 TB soy sauce 2 TB Brown mustered Place all ingredients in a pot simmer for 20 min stir so it don't burn. Apple Sauce

Apple's apple's,  every where is Apple's. Thank goodness there are tons of things, that you can make with Apple's.  Which leads me to show you how to make Apple sauce. Half bushel of macintosh apples pleaded cored and chunked 3 quarts water 1 cup honey 1 table spoon cinnamon optional Place Apple's in a big stock pot with water heat on stove on medium high bring to a boil for about 2 min.  Remove from heat and strain. Place Apple's in blender and mash them up when finished pour into a big bowl. Next add cinnamon and honey to bowl of Apple's mix well. This will make about 12 pint jars. Processing jars in your canner per its instructions. Now don't dump out that juice from Apple's look at my blog for Cider.

Apple Cider

           Tis the season for Apple picking This is so so good. And very easy to do as well not only do you get cider, but you also get Apple sauce. Half bushel of Apple's I use Macintosh apples wash them well. 1 cinnamon stick 1 cup honey / or sugar. I use honey cause it works better. Peel your Apple.  Save the peels discard the core. Chunk your apples up in a big stock pot.  Add about 4 quarts water cook the apples till they are soft and you can mash them, with a potato masher. In other pan cook Apple peels in 2 quarts water, till the Apple on the peels comes off. Next strain your Apple chunks into another stock pot press them a couple times. Use the apples to make Apple sauce. Next strain the peels into the same pan. Next add sugar and cinnamon stick to pot stir. Let cinnamon stick sit in pot for about 30 min and remove. And there you have it my cider.  Which is very good on a cold day warmed with a little nip of rum you will be good to go.

Lime pancakes

1 1/2 cups sifted flour 1 1/2 TB spoon sugar 2 TB spoon vanilla Zest of half a lime 1 1/4 cups milk 4 TB spoons baking powder Juice from 1 lime 3 TB spoons olive oil 1 egg Mix all ingredients together in mixing bowl. Let it set for 10 min or so before cooking. Heat griddle to 300 degrees cook for about 2 min on each side. Take some soft butter add a squeez or 2 of lime juice to butter spread over pancakes top off with syrup Makes 18 pancakes

Rhubarb Strawberry Cake

Cake Ingredients 2 cups flour 1 cup white sugar 1 cup brown sugar 1/4 cup olive oil 3 cups half and half 1 cup vanilla Greek yogurt 1 TBS corn starch 1 TBS baking powder 4 cups chopped rhubarb 1 quart chopped strawberry's 2 TBS Cinnamon Topping Ingredients 3 TBS spoon butter 1/3 cup brown sugar 3 TBS flour whip cream optional Place all dry ingredients in a mixing bowl, and sift together well. Then add remaining ingredients to bowl and mill well. Pour in to a light greased cake pan. Then mix topping with a fork to like a crumble, and sprinkle over cake. Place in a 350 degree oven on the middle rack and bake for about 45 min .

Buffys Bread Pudding

BREAD PUDDING 1 LOAF FRENCH BREAD 3 EGGS 2 CUPS MILK 1 CUP HEAVY CREAM 1 TBS CINNAMON 1 CUP SUGAR ½ CUP BROWN SUGAR 3 TBS VANILLA ½ CUP CHOPPED NUTS (OPTIONAL) ½ CUP RAISINS ½ CUP DRIED CHOPPED APRICOTS ½ DRIED CHERRIES ½ STICK MELTED BUTTER BREAK UP BREAD INTO CHUNKS LET IT SIT ON COOKIE SHEET OVER NIGHT.  LIGHTLY BUTTER BAKING PAN.PLACE BREAD IN BAKING PAN SPREAD NUTS AND FRUITS OVER BREAD. NEXT PLACE ALL REAMING INGREDIENTS (EXCEPT FOR BROWN SUGAR) IN A MIXING BOWL BEAT WITH MIXER ON LOW FOR ABOUT 3 MIN. POUR OVER BREAD IN PAN.  NEXT SPRINKLE BROWN SUGAR OVER TOP.PLACE IN A 350 DEGREE OVEN AND COOK FOR ABOUT 35 TO 45 MIN OR SO.  REMOVE FROM OVEN AND MAKE SAUCE TO POUR OVER TOP SAUCE 1 CUP HEAVY CREAM 2 EGG YOLKS 1 CUP SUGAR ¼ CUP BRANDY IN SAUCE PAN COMBINE EGG YOLKS AND SUGAR MIX WELL. ADD CREAM AND BRANDY COOK OVER MEDIUM HEAT STIR NON STOP TILL THICKENS, IT WILL COAT THE SPOON WHEN READY TO REM

Homemade Butter

My kids loved to help me make butter when they were little. Everyone got to help shake it up and roll it around. I can still see the amazement on their faces when the butter was done. So here is how I make butter. 1 quart jar with a lid 2 pinches sea salt 1 quart heavy cream Place all ingredients in jar place lid on jar.. Now shake it up roll it around back and fourth on the ground keep it moving around in the jar till the magic  happens. Which is about 30 min You will end up with about a cup of butter. The liquid that's left in jar makes a awesome meat tenderiser.

Best Sugar Cookies ever

Sugar Cookies 1 cup homemade butter 1 cup sugar 2 TBS vanilla 4 TBS baking powder 2 eggs 4 to 5 cups flour 2 dashes salt Parchment paper In a large mixing bowl you will cream butter, sugar,vanilla, salt, and eggs. Set mixer on medium speed mix for about 4 min. Next sift flour and baking powder together. Then add about a cup at a time of flour mixture to creamed mixture mix well by the end of adding flour you will mix by hand. Then wrap in wax paper and chill over night. Take cookie dough out and work in chunks of 4. Lightly flour work surface roll dough to about a 1/4 in and cut out cookies. Place cookies on a cookie sheet with parchment paper, place in a 400 degree oven for 9 min. Then frost when cooled. Makes about 48 2 in cookies

Stewed chops

These yummy pork chops are the best 6 pork chops 14 oz of crushed tomatoes 1/4 of onion diced 3 small sweet peppers diced 2 garlic cloves chopped 2 basil leaves diced 1 sprig thyme leaves 3 sprigs parsley leaves Salt and pepper Olive oil Heat about 3 TBS oil in pan, sprinkle salt and pepper on each side of chops. Place them in pan Brown each side remove from pan. Place garlic, onions, peppers in pan cook over med low heat to soften. Add tomatoes to pan along with herbs. Return meat to pan and simmer for 30 min till meat is cooked This goes well with dill pasta and steamed broccoli. Serves 6

My Dill Pickles

My Dill Pickles 8 canning pickles 2 garlic cloves Red pepper flakes 4 branches of fresh dill weed Vinegar Water canning salt 2 pint canning jars with lids Once again get your brine going on stove which will be half pint of vinegar and 1 1/2 pints water bring to boil. Place 2 pieces of garlic, a pinch of red pepper flakes, 2 branches of dill weed, and a teaspoon of canning salt in each jar. Next wash and cut pickles into spears place 4 pickles in each jar. Next pour brine over pickles to cover them, place lids on jar and place them in a hot bath for 6 min. remove and let cool will keep not opened on shelf for 6 months.

My southern low country pickled Asparagus

Southern low country pickled Asparagus 4 lbs fresh Asparagus cut to size 4 garlic cloves vinegar water 4 pint canning jars canning salt 1 package of zantarains  crab and shrimp boil season Heat up brine on stove which is 1 pint vinegar, and 3 pints water bring to a boil In each jar place 1 garlic clove,1/2 teaspoon canning salt, 1 table spoon zantarains season, and washed and cut to size Asparagus. Next fill the jar with brine to cover the asparagus place lids on jars and hot bath for 10 min

Curry Did you know that curry can help with many things as well?  Not only does it taste amazing but it also has healing properties as well. It is said to help in prevention of cancer, Heart disease, pain and inflammation relief, helps with bone health, it helps guard your immune system,  helps your liver function by helping rid your body of toxins, and it also has been known to reduce Alzheimer's. If you have not done so, I would research the benefits of Curry.  It is also used in a lot of Indian food dishes plant some today. I have it in my Herb garden at home.

Cranberry Salsa

Cranberry Salsa ½ pound cranberry chopped 1 seeded jalapeno pepper chopped fine 4 green onions chopped ½ green pepper chopped 2 tbs cumin 3 garlic cloves chopped 1 juice of lime and lemon 5 tb spoon white vinegar Sugar to taste to tame tart ness Salt to taste Mix all in a glass dish let sit for w while so flavors can mingle together

My Cream of Asparagus Soup

2 lb fresh Asparagus 1 onion diced 1 carrot diced 1 turnip diced 1 stalk celery diced 1 parsnip diced 1 garlic clove chopped Real bacon pieces 4oz bag 4 cup chicken broth 3/4 cream 4 pats butter Lemon, salt, pepper to taste First dice your veggies.  The asparagus leave about the first 1 1/2 inch tops set aside. Dice the remainder of the asparagus.  And veggies in the pot with the butter add the garlic as well, cook for about 8 min stiring. Next add the chicken broth to pot. Simmer on low heat for about 1 hour. Remove from heat and blend. Becareful cause it is hot. Place back in pot with the top of the asparagus and bacon add about 2 cups water and simmer for 30 min Next add cream mix well cook for about 3 min. place some in a bowl squeeze fresh lemon juice on top salt and pepper

Grilled stuffed Chicken Breast

Grilled stuffed Chicken Breast 6 bone less skin less Chicken Breast 1 12 oz container Feta Cheese 1 Cup Parmesan Cheese 1 lb Fresh Spinach 3 Jalapeno Peppers sliced in half and seeded 6 green Onions trimmed to about 6 inches long 2 lemons sliced salt and pepper to taste You will take and pound your Chicken breast with a mallet between some freezer paper just till you can roll it easy. Next salt and pepper each side of your chicken.  Then start filling your chicken add each ingredient to Each chicken breast. Then roll it up. then i take a skewer and secure the chicken closed. Spread Olive oil on the outer sides of the chicken so it does not stick on grill. Place chicken on a heated grill, cook on each side for about 20 min turning every 7 min or so. Goes well with lemon rice and Asparagus serves 6

Apple Bacon Cheddar Soup.

Apple bacon Cheddar Soup 1 lb smoked bacon 5 Green onions chopped 2 cups chicken stock 8 diced apples 1 cup half and half 1 lb Sharp Cheddar cheese shredded First cook your bacon till just done where you can crumble the bacon. Then place bacon, apples, and chicken stock in stock pot add like 1 tbs of bacon fat to pot as well, Bring to a boil and simmer for about 20 min. Then add the half and half and cheese and stir to melt cheese. To serve place some soup on a bowl with green onions, and croutons on top.

A Irish Dublin Coddle dish

A lot of people during St Patty's think of Corn Beef and Cabbage.  In America we tend to think, That this is a Irish dish.  But truth be told it is not.  You will not find it in Ireland.That is our rendition of what the true Irish eat.  It is actually Cabbage and Bacon that they enjoy.This here is a Irish dish I found in a old cookbook.  Although I made a little change,  Just 2 things to this true Irish dish.  I actually love this as much if not more than, Corn Beef and Cabbage.  I hope youwill give this recipe a try it is very very good.    Half head of Cabbage chopped 1 onion sliced 2 carrots chopped 6 Russet potatoes sliced 1/4 in thick 1 pound beef sausage sliced 1 pound bacon raw chopped 2 cups chicken broth. salt and pepper In a dutch oven you will layer this recipe. like so cabbage onion sausage bacon potato salt pepper Do this in 3 layer's When you have everything in dutch oven add the chicken broth. Cover with li

Pasta and My Vodka Sauce.

There is nothing better then Vodka Sauce I could live off this stuff.  10 Italian Tomatoes peeled and diced and 3 extra tomatoes diced small 1/4 cup diced Black Olives 1 small onion diced 1 Garlic clove diced 3 Large Basil Leaves chopped fine 1/4 cup Vodka 1/2 cup cream ( half and half) 3 TBS Olive Oil Place Olive oil, Onion, and Garlic in a Sauté pan cook on med heat for about 3 min Add your 10 diced tomatoes to pan, along with diced black Olives stir to mingle the flavors of all.  Simmer for about 5 min or so. Then add the Vodka to pan simmer for another 6 min. Add cream to pan and cook for about 3 min. Remove from heat Add Basil to pan and Stir. Serve over your Favorite Pasta. Serves 6 

Honey Whiskey Hoppin Cornbread

1 box jiffy cornbread mix 1/2 cup cake flour 1/3 cup whiskey 1/3 cup milk 1/4 cup Honey Greek yogurt Mix well all ingredients in a bowl and place in a 350 degree oven till golden Brown edges on top in normal cases. Today I'm placing it on my grill with wood heat . Not having power won't stop me from cooking.   I prefer wood open stove cooking.

No power thats ok

You can still cook outside  as long as you have fire you can always cook. I'm making a pot of what not soup. I put in some cans of beans, smoked sausage, celery, onion, carrots, turnips, some water some Cajun season. Now it's cooking.  Should be done in time for dinner. Now to put my whiskey corn bread together.

My Biscuits and Gravy guy's

1 lb mild pork sausage 2 teaspoons garlic powder 2 teaspoons season salt crack black pepper to taste 1/2 teaspoon red pepper flakes 1 cup flour 1/2 gallon milk First brown your sausage in a butch oven. break sausage up as it cooks. In the last 2 min of cooking sausage sprinkle the garlic powder, season salt,  pepper, and red pepper flakes over the sausage Take the flour and sprinkle it over the sausage mix it up fast and have your milk ready to pour over the meat. Pour in milk and stir you want to stir this so it does not  burn on bottom of pan. I will cook it to the thickness that i like for gravy. Remove from heat and dump over biscuits I like to add sliced tomatoes on top yummy

Cookbook update

Buffy here, Just letting you all know my book will be done in a couple of weeks. It will be called "Cooking With Buffy" my comfort foods. Grilled Chicken on Top of a Strawberry Peach Salad

This is so light and fresh and very good.  A great summer time dinner quick and easy For the Chicken: 3 Boneless Chicken breast split in half Lemon pepper season For the Salad: 1 Quart of fresh Strawberry sliced 2 peaches washes peeled and sliced 1 small Red onion sliced 1 Yellow bell pepper sliced 1 Quart of  fresh tomatoes sliced in half Fresh spring mix of Salad greens For the Dressing:  1/4 cup water 1/3 cup apple cider vinegar 1/3 cup olive oil 2 tbs spoons brown mustard 3 basil leaves 1 sprig thyme ( leaves only no stem) 8 strawberry's half of a Peach peeled. Take the Chicken and season with Lemon Pepper on each side. Place on grill cook about 8 min on each side. Just till no longer pink and juice is clear from chicken. Just make sure the chicken does not lose its juices over cooked chicken is very dry. Assemble your salad by putting a bed of greens on plate then add the other topping to your plate.

Roasted root veggies

I loves these so much, and you will to. 1 Red potatoes washed and chunked 1 carrots washed and chunked 1 beet washed and chunked 1 parsnip washed and chunked 1 turnip washed and chunked 3 garlic clovers peeled and chunked 1 Onion peeled and chunked 1 Sprig Thyme 1 Sprig Rosemary 3 Pinches Salt 3 Pinches Cracked Black Pepper Olive Oil 1 fresh Serrano pepper sliced Place all root Veggies  in a large bowl,  Toss and coat with olive oil, Place in single layer on a baking sheet. Place rosemary, thyme, salt and pepper over root veggies on baking sheet. Place in a 420 degree oven for 30 min turning after 15 min then continue cooking for 15 more min. Remove from oven and spread the Serrano pepper over vegetables Serves 2

Benefits of Basil

Did you know basil has a lot of uses. Not only is it good to cook with but it also has other uses. It helps with inflammation and also has anti viral capabilities. I eat a basil leaf in the morning, afternoon, and evening to help ward off sickness it helps. And it also helps with the ugly varicose veins. Go and read up on Basil you will learn alot.

Rosemary Potatoes

6 Red Potatoes washed and quarter them 1 sprig Rosemary Olive oil. Place cleaned cut potatoes in steamer pot steam potatoes till they are done. Next place them in a bowl. Drizzle Olive oil Over potatoes Next chopp rosemary and place in bowl with potatoes. Add a pinch of salt and pepper turn to coat potatoes. Serves 4

Tomato Soup for The Soul

8 Roman tomatoes peeled 1 small Onion diced 1 small Carrot peeled diced small 3 good size Basil leaves chopped 7 Tarragon leaves chopped 3 cups vegetable stock 1 cup half and half To peel your tomatoes place them in a sink and dump some hot water over them Let them sit in water till skin cracks. Then start to peel skin  and dice up tomatoes Then place tomatoes,  onion, carrots,  and stock in a pot on stove. Bring to a boil then simmer for about 30 min Then mash the soup with a potato masher. Next add your half and half and herbs to soup cook for another  say maybe 8 min. Add salt and pepper for taste and enjoy. Serves 4

My Banana pudding

               Very easy to make yummy 2 cups half and half 2 cups coconut milk 2 cups sugar 6 eggs 4 TB cornstarch 3 teaspoon vanilla 3 teaspoon rum extract 1 small carton whipping cream 4 banana sliced 2 cups raw instant oatmeal Place eggs in a bowl Then add sugar MIX well. Like so Add half and half, coconut milk, salt, and cornstarch stir to mix well Then cook on stove over medium heat stir continuously. Cook till it thickens. Like so Remove from heat at this point. Add vanilla  and rum extract stir to combine flavors Let cool while you slice banana and make whip cream.  Then start layers like so Oatmeal  Banana  Custard  Oatmeal  Banana  Custard Do this four times you will make 4 layers Whip cream Empty whipping cream in a bowl  add 2 tb sugar and 2 teaspoons vanilla whip with electric mixer till thick like whip cream And I spread 2 crushed  Graham crackers on top.

Pizza rolls anyone

1 pizza dough My pizza sauce enough for 1 pizza 2 cup Mozzarella cheese 1 cup parmesan cheese Fresh basil leaves chopped Olive oil And any other toppings you like chopped fine. Roll your pizza dough chunks flat as if you were making a thin crust pizza Cut 2 in squares out of crust On half of square place your toppings Next wet finger with water and moisten Edges of one side of square, fold in half and pinch edges with fork Next wipe each side of pizza roll with olive oil place on pizza pan Place in 420 degree oven cook for 12 min till Crust is light Brown. Yummy
